If you are looking for a fresh, fruity and refreshing summer appetizer, try my watermelon and cantaloupe gazpacho. This drink/appetizer can be served any time of the day - especially during the hot ones! You can enjoy this light treat in the morning with your breakfast, as a refreshing appetizer in the afternoon, by adding a touch of alcohol, or after lunch or dinner as a healthy desert. My fruity gazpacho is the ultimate low-cal, multipurpose melon concoction.
Ingredients: ¼ of Watermelon (seeds removed)
Before cutting up your melons, drop you knife and grab your melon baller or carving fruit spoon if you have one. In French we call it the "Parisian spoon," because it’s that fancy. Carve out some cantaloupe and watermelon circles; these will add a touch of elegance to your final product.
Cut the rest of your cantaloupe and watermelon into small pieces and drop your ingredients in a food processor or blender. Once the texture is nice and thick, cool the liquid in your refrigerator until ready to serve.
Next, add the chilled mixture to a serving glass and place the cantaloupe and watermelon decorations on top along with a few decorative fruit garnishes (I used blackberries, strawberries and raspberries). Then serve and enjoy this easy summer recipe!
