If you are having a small gathering and are looking for something easy to prep up for the night, go with this 20 minute easy red lentil recipe.
Red lentil dip will give you that edge and element of surprise that your party guests are looking for. Instead of serving the usual hummus or guacamole dips, which are equally delicious, the lentil dip expands your horizons to new levels of dipping sauces and success!
Ingredients:
8 oz of Red Lentils
First peal your onions and garlic and chop them into small little pieces. In a pot on medium heat, lightly sear your onions and garlic for 3 to 4 minutes until they soften down.
Add all of your spices: the curcuma, the cumin, the ginger and the coriander, and continue to stir. It’s ok if it gets a little sticky, just keep stirring. Finally add your red lentils, ½ a cup of water and your tomatoes. Once all your ingredients are in, bring them to a boil, and then drop your heat down to low. All you need to do then is let them simmer on a low fire while stirring it every once in a while just to make sure they are not sticking to your pot.
Once the mix is nice and soft, add it to a blender or food processor and let it do its job. The mixture should become nice red/orange color with a smooth, yet slightly course texture. You can use black or green lentils, but your dip won’t look as tasty, that’s a promise.
